Gala Sneak Peek: Bon Appetit!
Behold the spread created for guests at The LAMP’s birthday gala next week:
Brioche with smoked salmon, green apple, cucumber and lime cream
Jumbo crab spring roll with wasabi mousse and organic micro-basil
Baby cucumber stuffed with tomato chutney and Kalamata olives
Chocolate and caramel ganache tart
Raspberry tart with vanilla pastry cream
Tiramisu
When we sat down for the tasting last week, jaws promptly dropped. Our gala chef, Sebastien, not only owns his own catering company but also makes all the desserts for Chez Moi in Brooklyn Heights. Sebastien is serious about French food–he orders all of his flour directly from France, and makes everything from scratch to be served the same day. He uses only Valhrona chocolate, does not add any sugar to his desserts and sources his produce locally. Our amateur food photography does not nearly do justice to Sebastien’s work, but as one LAMP staff member declared after the tasting, “I’m calling all my friends when I get home to tell them they’re stupid if they miss this.”

WOW, you say the chef Sebastien orders everything directly from France? It must be delicious, and if you are served with only French fresh products the result should be magnificent right? Thanks for this address.
